Where Did The Weekend Go?

I pretty much spent this whole weekend just getting ready for the upcoming week! I think all this back to school stuff has worn me out! I am just exhausted. Whew!
Friday night Matt headed back up to the school to watch the Lions pull out another victory. I was pretty tired from school, so I stayed home with Jake. I was so ready to spend some sweet time with him! He has a little cold so I gave him a warm bubble bath and we just cuddled together.
Saturday Matt was very busy with work and I was busy around the house cleaning. I managed to get a lot done. The sheets are clean, bathroom are scrubbed, all the laundry is caught up, the house is dusted and vacuumed and the floors are swept. Of course we had to make a trip for groceries too! So we spent our Saturday night at Walmart:)
At least we now have food to eat this week:)
While we were at Walmart, we took a trip to the toy isle. Jake LOVES to play with our cell phones. So we found a pretend one for him to play with. Of course Matt picked out something else for him too...they had fun playing with it when we got home...
For the past several weeks I have been doing a Bible study with some ladies from my church. I really wanted to be involved in a study over the summer since I would have some extra time to do one. Most of the studies were breaking for the summer, but they were going to offer this one as an online study...

I had never heard of Kelly Minter or any of her studies, but I have thoroughly enjoyed it! I just finished it up this afternoon. The study basically talked about the idols, or little g gods, that we have in our lives and how to rid ourselves of them to make room for the "big G" God! At first I didn't think that the study was really going to apply to me, but as I continued through I realized that we all have idols in our lives that take the place of the one true God. Kelly used several examples from Gods Word to bring home this concept. I love the way Kelly wrote the study and how she incorporates her very own stories and illustrations. She also includes stories from her fellow "NOG" (No Other God) girlfriends as well as some yummy recipes to try! If you are looking for a GREAT study I highly recommend it!
Well, Jake is sound asleep and Matt is watching some football. I think everything is set for tomorrow, so I am off to bed...

Back To School Tomorrow!

The room is decorated. The text books are ready. Lesson plans are made. Lunches are packed and the alarm clock is set...for 5:00am! Tomorrow is the first day back at school for all my students. I have been working hard getting things all ready and now all I need are my students! We are ready for a great year and looking forward to all that God is going to do! Please pray for us tomorrow as we get the year started!

Weekend Wrap-Up

After a very busy first week back at school, Matt and I had a little fun over the weekend only to gear us up for another busy week! Ugh! How come weekends go by so fast? Anyway...
Friday night we ate a quick meal at my favorite fast food restaurant, Chick-fil-a and then went to cheer on the Lions at our school's first football game of the year!
We had to leave a little early because it got late and Jake was really tired, but the Lions pulled out a victory which was awesome!

It was so HOT sitting outside, but several of us were talking and saying that it won't be long before we will be out there with all of our sweatshirts!
Those fall nights can get pretty chilly for sure!

And then on Saturday I was able to be a part of a very special baby shower. As I have said before, many of my friends from college have served, or are currently serving the Lord on the mission field. Being so far away didn't stop us from throwing my sweet friend Blair and her husband James a shower for their sweet baby boy due to arrive mid October! We were able to hold a baby shower over Skype!
We could see them and talk to them just like they were in the room too!

Some of my pictures didn't turn out the best, but here are Blair and James on the screen telling us a little about the pregnancy, their country and their future plans!

We even opened gifts! Here is Blair's mom showing her Baby Romans new diaper bag! As soon as Blair delivers, her parents will be flying over to see their new grandson and to help Blair and James out a little.

This is Haley, Blair's sister. I discipled Haley when she was in High school and now she has graduated college and is married! Yikes! I loved seeing her though and catching up a bit.

Here I am with Tori. She was the hostess for the shower! She did a beautiful job putting everything together to make James and Blair feel so special!

And here I am with Sherri. I know that she can't wait to be a Grammy in just a few short weeks!
I am so happy for Blair and James and can't wait to welcome when Baby Roman when he arrives!

A Night With The Boys

Today was my first day back at school. We were very busy all day today with meetings. It is always so exciting to hear the vision for the new school year and pray for God to do big things. I am so blessed to be able to teach at a Christian school and to be able to talk
about Jesus all day long!
Last night I wanted to do one last fun thing with Matt and Jake before everything kicked back up into high gear. We decided to have a fancy dinner at Kabutos! We hadn't been there in a very long time, but decided it was a good night to go!
Matt and I ordered hibachi chicken and it was yummy! We could have split a plate, but instead we have a refrigerator full of leftovers:)
Jake loved watching all of the fire and tricks:)!

Family Time

This weekend we were so lucky to have my Grandparents from Michigan come down for a visit. I haven't seen my Grandparents since my wedding which was over 3 years ago! We had such a nice time visiting and I think they loved seeing their 3 new great grand kids! That officially brings their total to 19 grandchildren and 13 great grandchildren! What a blessing!
We spent lots of time together as a family.

10 Things I Love About YOU!

Here I am once again posting about my little man because he is another month older! 10 months already! So in honor of him being 10 months old I am listing 10 of my favorite things about Jake! Of course there are WAY more than 10, but here are some of the best!
1. When you just needs some mommy lovin' and no one else will do but me!
2. Mmmmm...your sweet smell when you just get out of the bath and are all cleaned up!
3. I love seeing you learn all of your new tricks. My favorite is when we sing "If You're Happy and You Know It, Clap Your Hands" and you just clap away!
4. Your WHITE hair!
5. and your BIG blue eyes...precious! You are always complimented on them!
6. I love that you are such a good eater and will eat anything...just like your momma!
7. I love getting you up in the mornings and seeing your sweet face peeking out the door always waiting for me to come and get you!

Cooking Up A Storm!

Well, this is my last week of summer vacation (sniff, sniff). I am so sad. Not because my days of being somewhat lazy are over and not because I won't be able to hang out at the pool every day, but because I won't be at home with my Jake. My heart will literally be in a million pieces beginning on Tuesday. I am going to be a mess! I wish I could just snap my fingers and it be May again. Right now though (I am trying to remind myself), I am called to be a teacher and am thankful to have a great job. I love the people that I work with and I am so thankful I am at a Christian school. I know Jake will love being with other kids and once we get back into our routine we will make it. Enough of that though because my eyes are now filled with tears and I can't see to type:)! Whew...
One thing that I did a little bit last year that really helps me to be able to take advantage of every minute I have with my family in the afternoon is cooking my dinners ahead of time. By the time I get home in the afternoon we only have a short amount of time before Matt leaves to coach the boys basketball team back up at the school. So yesterday I went to Walmart and stocked up on several ingredients to make lots of different meals to have in my freezer. This is what I looked like yesterday (minus the pretty dress and apron of course)...
It took me a few hours to do, but my sister came over to help which made things go quickly! I made 7 different dinners which gave me 12 meals for my freezer (most dinners I can split in half). It is so helpful to just pull one out and heat it up for dinner! I hope to make some more in the next few weeks so I can stock up again! Matt even laughs at me because I HATE making lunches so I also make and freeze several peanut butter and jelly sandwiches so I can just pull those out too! Ha ha! They taste great and make packing lunches a breeze!
I wanted to leave you with one sweet picture of my little man. I didn't take this, but Jake's little buddy Jay turned one yesterday so we all got together to help him celebrate!

It was such a HOT afternoon, but Jake didn't mind because he just hung out at the pool the whole time!

A Happy Birthday Lunch!

Yesterday I had a birthday lunch with two of my sweetest girlfriends. We went over to Michele's house to help her celebrate her birthday...and yes, she cooked for US! She said that she loves to cook and didn't mind! We had a great time together!
Michele (in the middle) has been my assistant for the past two years at school. I couldn't have gotten through them without her! She has been SUCH a HUGE blessing to me. She would do anything for me and help me in so many ways always going above and beyond. She is such a giving and caring person. I am going to miss her this year dearly!
And of course we had so much fun with Mrs. Stacey there! Another blessing in my life. She was so sweet to help us out with Jake when I went back to finish out my school year! Jake loved her and so did we!
Michele made a delicious lunch. She made a GREAT enchilada casserole (which I will be making for my family) and two delicious desserts...
She found a recipe for the original Cheesecake Factory cheesecake and boy was it good. She even had several different toppings that we could put on it. I had cherries on mine...yummy!

And look at this...I know, I know...yes, I had some of this too!
Michele sent us a few pieces to take home too!

I want to include the recipe for the enchilada casserole because it was sooo good and she said it is very easy. It is actually a recipe from Good Morning America!
If you make it, you will LOVE it!

Charlie's Enchilada Casserole
From Charles Gibson October 7, 2002
If you like the spicy, cheesy taste of Doritos, you might want to try this simple dish!

1 can chili with beans
2 cups sharp cheddar cheese, grated
1 large 12-ounce package Doritos (save 2 cups for casserole topping)
10 to 15 oz. enchilada sauce
8 oz. can tomato sauce
2 tbsp. onion, grated
1 1/4 cup sour cream

For the topping, set aside sour cream, 1/2 cup of the grated cheese, and 1/3 of the Doritos bag.
Grate a small onion and measure 2 tablespoons and set aside.
Take remaining 6-cups Doritos and crumble with your hands into mixing bowl.
Mix the onion, and all the other ingredients, except those for the topping, and place into an 8 1/2 x 11-inch casserole dish.
Bake for 20 minutes at 375 F.Remove casserole from oven. Spread on sour cream, cover with Doritos, and sprinkle 1/2 cup cheese.Bake for an additional 5 minutes and serve.

Double Birthdays=Double Fun

This past weekend we celebrated two very special people! Our niece Lily turned 3 on August 1st and Matt turned 28 on August 3rd! Jimmy, Matt's older brother drove up with his family for a visit from Florida. Saturday night we all got together to have some fun!

Lily's special present was a new, bright, shiny, red wagon. This came in handy considering she broke her foot right before they left to come to Charlotte! Her poor little foot was wrapped up and in a boot all weekend!
All the kids loved the wagon. Jake sat in it for a little bit before he figured out how to do this...

Just leave it to Jake! Of course this was way more fun!

Yesterday Matt and I celebrated again with just the three of us. We weren't planning on doing anything big. Matt opened his gift from Jake and I which was a gift certificate for a round of golf. Matt has been wanting to play for a while now so I thought he would enjoy that.
And then we decided to head to dinner. Since it was his birthday, he got to pick...
K & W was his choice (NOT my favorite place, ugh)! Fried chicken and mashed potatoes...
There was a little pet store right around the corner so we stopped their after dinner to let Jake see some of the animals.

Some of our good friends told us about a neat little ice cream place called Rita's.

Since we we so close and had never been there, we made room for a nice birthday sweet treat!

My Secret Mission

I have to start off this post wishing my husband a very HAPPY BIRTHDAY!
Today he turns 28 years old!
This whole weekend we have been celebrating! Matt's brother, Jimmy and his family came up and visited from Florida. Our sweet little niece Lily also has an August birthday so we had a party for them both this weekend. I have lots of pictures and will post about that later!
In the mean time I am on a secret get Matt to eat some vegetables. He doesn't eat any! He says it is the texture, but I don't believe him:)! He won't even TRY anything! It frustrates me soooo bad! A while back I bought this cookbook at a consignment shop for $0.50.
It has been in the cabinet collecting dust, but the other day I pulled it out to see exactly how it works. Basically the instructions are to puree all sorts of different vegetable (anything from broccoli and squash to cauliflower and sweet potatoes) and hide them in the foods we eat everyday.
Since I didn't have any of these veggies around my house I decided to start with an easy recipe. I made chocolate chip cookies and the secret ingredient...chic peas! I didn't have to puree anything so I gave it a try and I was pleasantly surprised! I didn't tell Matt what I did. When he got home he took a big bite of one. He told me he thought that I did something wrong to the cookies:( I started laughing so hard. I told him what was in them. He hasn't eaten another one since. Ha Ha!
To the average person, they are just fine. They are slightly more cakey then regular chocolate chippers and aren't quite as sweet. It makes me feel good though that even though I am eating chocolate chip cookies, I am getting my veggies in too! mission is not yet accomplished, but I will be trying some other recipes from the book soon!

Chocolate Chip Cookies
Recipe by Jessica Seinfeild

Nonstick cooking spray
1 cup firmly packed light or dark brown sugar
3/4 cup trans-fat free soft tub margarine spread
2 large egg whites
2 teaspoons pure vanilla extract
1 (15 - ounce) can chickpeas, drained and rinsed.
2 Cups (12 ounces) semisweet chocolate chips
3/4 cup chopped walnuts (optional)
3/4 cups raisins (optional)
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350 degrees, F. Coat a baking sheet with cooking spray.In a large mixing bowl or the bowl of an electric mixer, beat the sugar and margarine with a wooden spoon or on medium speed until smooth. Beat in the egg whites and vanilla, then the chickpeas and chocolate chips. Add the flour, oats, baking soda, and salt, walnuts and raisins (if wanted,) and mix on a low speed until a thing dough forms.Drop the dough by the tablespoonful onto the baking sheet, spacing the cookies about 2 inches apart. Press gently with a fork to flatten. Bake until the cookies are golden brown and just set, 11 to 13 minutes; do not over bake. Transfer to a rack to cool. Store in an airtight container for up to 3 days.
